Mountain tea comes from the plant Sideritis or also the iron of dioscorides, which was named after the Greek word “iron” thanks to the healing effect of the plant against wounds caused by iron weapons. It grows in rocky places at high altitudes. There have been some spotted growing in the Judean Hills of Israel, no doubt brought by the Greek conquest colonization, and invasion of the Holy Land.
The genus Sideritis includes a variety of plant species (more than 150 species), which usually have small yellow flowers. The largest part of the plants consumed comes from indigenous populations that are a bit over-harvested. Greece and Spain are the countries with the highest consumption of mountain tea. These areas of the world have over 17 different varieties.
