Savory (genus Satureja) includes around 30 species of aromatic herbs in the mint family (Lamiaceae). Native to Israel, Egypt and North Africa, it’s grown in many climates, especially in France and Spain.
The dried leaves and flowering tops of several species are used to flavor a variety of dishes, particularly poultry and stuffings, and are a common addition to herb bouquets.
The greenish-brown dried leaves have a fragrant aroma and a slightly sharp, warm taste. Savory contains essential oil within its branches, with carvacrol as its main component. The plant will give a good amount of essential oil when steam distilled, and the hydrosol water is often used in culinary dishes as well for medicinal purposes.
