Wine might have a monopoly on much of the grape family spotlight with its intoxicating ways, but a byproduct of winemaking is enjoying a star turn of its own in the health and beauty market. Grape seeds, once relegated to be tossed in the garbage, are making it big as the basic raw material of grapeseed oil.

Chardonnay is a grape that some say originated in Israel and is therefore indigenous to the region. This is true since the grapevines do grow wild in some regions without care takers to help cultivate and bring the fruit forth. So, it had survived centuries just happily growing its leaves.
On a visit to Holy Land in 1887, Baron Edmond de Rothschild decided he wanted to make a serious Holy Land wine. He made the decision to concentrate on certain varieties of grapes. His administrators in Eretz Yisrael were against the idea, but his vision was supported by Professor Gayon from Bordeaux and Charles Mortier, the manager and winemaker of Chateau Lafite.
Most native grapes to the Holy Land were grown in the Bethlehem and Hebron, and Negev areas cultivated by both Jews and Arabs. Much of these varieties were cultivated by several Jewish owned wineries, in particularly in the Old City of Jerusalem.

Native varieties in Israel are over 120 indigenous grapes, including white varieties like Marawi, Jandali, and Dabouki. Some winemakers are working to bring these native grapes back into production. Semillon grapes grown in Israel showcase diverse aromatics encompassing citrus, tropical fruits, and honey. They exhibit moderate to high acidity, resulting in a full-bodied texture and potential for aging for wine.
The warm climate contributes to ripe flavors resembling marmalade and honey, with blends often including Sauvignon Blanc. Semillon is used in dessert wines too, while terroir variations influence the grape’s profile across different regions in Israel.
It is important to note in 1870 there was a school of winemaking in the Old City was “Mikveh Israel Agricultural School”. The directors of the school wisely chose Mediterranean varieties by considering the climate which to grow these more easily than European varieties of grapes.
Biblical Texts:
Numbers 13:21-25 So, they went up and spied out the land from the wilderness of Zin as far as Rehob, at Lebo-hamath. When they had gone up into the Negev, they came to Hebron where Ahiman, Sheshai and Talmai, the descendants of Anak were. (Now Hebron was built seven years before Zoan in Egypt.) Then they came to the valley of Eshcol and from there cut down a branch with a single cluster of grapes; and they carried it on a pole between two men, with some of the pomegranates and the figs.
Numbers 13:20 How is the land, is it fat or lean? Are there trees in it or not? Make an effort then to get some of the fruit of the land.” Now the time was the time of the first ripe grapes.
Leviticus 26:5 Indeed, your threshing will last for you until grape gathering, and grape gathering will last until sowing time. You will thus eat your food to the full and live securely in your land.
Deuteronomy 24:21 When you gather the grapes of your vineyard, you shall not go over it again; it shall be for the alien, for the orphan, and for the widow.
