Also known as Judean Hyssop or Palestina Hyssop
Judean Hyssop has been valued for centuries as an antiseptic and is often used in essential oil form as both a medicinal plant and aromatic herb. Its spiritual uses date back thousands of years, even appearing in the Bible in Psalm 51:7, which reads, “Thou shalt purge me with hyssop, and I shall be clean.”
Today, it’s used to support digestive and intestinal health, helping with liver and gallbladder conditions, stomach pain, and loss of appetite. It’s also a natural aid for respiratory issues, from easing coughs and soothing sore throats to helping prevent colds, infections, and even asthma symptoms.
Known as a purifier and cleanser for millennia, hyssop was used by the Israelites, who believed it could protect them from plagues. Its protective reputation inspired people to hang dried sprigs in their homes to ward off any negativity.
Hyssopus officinalis, native to Southern Europe, the Holy Land of ISrael and Egypt,, and the Caspian Sea area, gets its name from the Hebrew word “ezov,” meaning “holy herb.”Hyd=ssop was and still is one of the most important herbs for its healing and soothing properties. Israel home to several varieties of hyssop species
While it has purple blooms like lavender, it’s a completely different plant, usually growing as a 12- to 24-inch shrub with woody stems, straight branches, dark green leaves, and fragrant flowers in shades of purple-blue, pink, or white. It’s typically harvested twice a year, in late spring and early fall, with the stalks dried over about six days.
Once dried, the leaves and flowers are finely chopped, and the mixture can be stored for up to 18 months. The plant is also used to produce essential oil, extract, and capsules.
Hyssop belongs to the mint family, giving it a minty flavor that can be quite strong in dishes. It’s best to use it sparingly when adding to salads, broths, or soups. See Israel’s White Hyssop savory Zuta Lavana Ezov here
