Used in Jewish Holy Temple incense and the Ketoret Blend (Exodus 30:22-32). Often mistaken for cinnamon, but Cassia does not have the characteristics or properties that Cinnamon bark or leaf has. Cassia is in a category of its own and is quite unique. We know that Cassia is oftentimes brought from Asia and China. However, it is interesting to note Cassia trees are growing in various areas of Israel mostly in the Ramat Gan area of Israel.
Golan and Hodaya Weiss took Cassia from Asia Cinnamon (burmannii) and Cassia (Cinnamomum cassia) from Israel and distilled the two raw same species Cinnamomum cassia ingredients together on Rimmon Farm in Israel. The quality of this Cassia is absolutely amazing. We believe the Israel Cassia elevates the Cassia we commonly get from Asia.
