The aroma of artichoke absolute is truly distinctive, starting with a bitter, green note and bit spicey that perfectly captures the scent of the artichoke leaf itself. As it unfolds, it reveals earthy, rich, warm, and with slightly sweet vegetal tones, very full bodied with impressive staying power.
This Egyptian variety made its way to the Holy Land and became native over 4,000 years ago. The artichoke is one of the world’s oldest vegetables, possibly first cultivated in Eastern Africa before reaching Egypt. In the ancient world, artichoke leaves were valued for their health benefits, and they’re still used in Western and Middle Eastern herbal medicines today.
The bitter leaves are often used in extracts or infused into liqueurs but we took a step further and created an essential oil. This oil is made through sugarcane extraction at 190 proof, after which the alcohol is evaporated by placing the material in a crucible under vacuum. What remains is an amazing absolute essential oil with no alcohol left in it.
